Formula

  • 500 g puff pastry
  • 350 g thick cooked apple filling
  • egg wash
  • sugar

Method

  1. Start. Roll pastry and cut 5-inch squares. Keep dough cold.Watch for: Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.
  2. Then. Add cold filling, brush edges lightly, fold, press, and vent.Watch for: Cut through the center and sweep up the side while rotating the bowl; stop when the last dry streak disappears so you preserve air and tenderness. Keep components level and leave edges clean; uneven thickness shows up as uneven setting and slices.
  3. Finish. Chill 20 minutes, egg-wash without coating cut edges, and bake 20–25 minutes.Watch for: Keep it covered during the rest; move on only when it is evenly cool or firm, including at the center. Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.
