Carrot cake

Level 63 of 100Advanced2 hr350°F / 175°CManaging moisture

Formula

  • 250 g flour
  • 300 g sugar
  • 8 g soda
  • 6 g spices
  • 5 g salt
  • 4 eggs
  • 220 g oil
  • 350 g finely grated carrots
  • 120 g nuts

Method

  1. Start. Whisk dry ingredients. Whisk eggs, sugar, and oil to a thick emulsion.Watch for: Scrape the bottom and sides once, then stop at the texture described; extra mixing can add air or develop unwanted gluten. Apply a thin, even coat and keep it off cut edges or seams unless the step says otherwise.
  2. Then. Fold in dry, then carrots and nuts. Divide between pans.Watch for: Cut through the center and sweep up the side while rotating the bowl; stop when the last dry streak disappears so you preserve air and tenderness.
  3. Finish. Bake 30–38 minutes; cool fully before cream-cheese frosting.Watch for: Keep it covered during the rest; move on only when it is evenly cool or firm, including at the center. Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.

The concept

Produce adds water, sugar, and structure—not just flavor.
