Flour comparison
Formula
- Make identical 300 g-flour rolls with cake, all-purpose, bread, and whole-wheat flours
Method
- Start. Keep water percentage, salt, yeast, mixing time, and dough temperature constant.Watch for: Scrape the bottom and sides once, then stop at the texture described; extra mixing can add air or develop unwanted gluten.
- Then. Label, ferment, shape, proof, and bake together.Watch for: Cover so the surface cannot dry out and judge readiness by volume and feel, not the clock alone; a cool room may need longer. Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.
- Finish. Measure width and height; tear open and compare chew and crumb.Watch for: Use the scale for repeatable portions; tare the vessel between additions and label divided mixtures immediately.
