Leavener lab cake

Level 20 of 100Foundation45 min350°F / 175°CSide-by-side diagnosis

Formula

  • Make one small yogurt cake batter; divide into 4 cups and add: none
  • soda only
  • powder only
  • both

Method

  1. Start. Mix a simple batter from 120 g flour, 100 g sugar, 120 g yogurt, 1 egg, and 50 g oil.Watch for: Scrape the bottom and sides once, then stop at the texture described; extra mixing can add air or develop unwanted gluten. Apply a thin, even coat and keep it off cut edges or seams unless the step says otherwise.
  2. Then. Divide evenly; label and add scaled leaveners to three portions.Watch for: Use the scale for repeatable portions; tare the vessel between additions and label divided mixtures immediately.
  3. Finish. Bake in lined muffin cups 16–20 minutes; compare height, color, aroma, and crumb.Watch for: Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.
