Level 42 of 100Growing3 hr500°F / 260°CKneading to windowpane

Formula

  • 500 g bread flour
  • 325 g water
  • 10 g salt
  • 5 g instant yeast
  • 15 g oil

Method

  1. Start. Mix and knead 8–10 minutes until a thin stretched piece lets light through.Watch for: The dough should progress from rough to smooth, elastic, and slightly tacky; pause for 5 minutes if it fights you or begins to tear. Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.
  2. Then. Rise 60–90 minutes; divide and rest 20 minutes.Watch for: Cover so the surface cannot dry out and judge readiness by volume and feel, not the clock alone; a cool room may need longer. Keep it covered during the rest; move on only when it is evenly cool or firm, including at the center.
  3. Finish. Stretch, top lightly, and bake on a preheated steel or inverted sheet 8–12 minutes.Watch for: Let the oven heat for at least 20 minutes and position the rack before the batter or dough is ready. Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.

The concept

Kneading aligns hydrated proteins into an elastic structure.
