Banana bread

Level 6 of 100Foundation75 min350°F / 175°CReading doneness

Formula

  • 225 g mashed ripe banana
  • 100 g melted butter
  • 150 g brown sugar
  • 2 eggs
  • 220 g flour
  • 5 g soda
  • 4 g salt

Method

  1. Start. Line an 8½×4½-inch loaf pan. Whisk banana, butter, sugar, and eggs.Watch for: Scrape the bottom and sides once, then stop at the texture described; extra mixing can add air or develop unwanted gluten. Apply a thin, even coat and keep it off cut edges or seams unless the step says otherwise.
  2. Then. Fold in flour, soda, and salt just until no dry pockets remain.Watch for: Cut through the center and sweep up the side while rotating the bowl; stop when the last dry streak disappears so you preserve air and tenderness.
  3. Finish. Bake 50–60 minutes; center should reach about 200°F / 93°C.Watch for: Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.

The concept

You are learning to triangulate doneness instead of trusting one signal.
