Fudgy brownies

Level 7 of 100Foundation50 min350°F / 175°CFat versus flour

Formula

  • 170 g butter
  • 200 g sugar
  • 75 g cocoa
  • 2 eggs
  • 95 g flour
  • 3 g salt
  • 100 g chocolate

Method

  1. Start. Melt butter; whisk in sugar and cocoa. Cool 3 minutes, then whisk in eggs.Watch for: Use gentle heat and stir often; remove from the heat as soon as the mixture is uniform so residual heat does not take it too far. Scrape the bottom and sides once, then stop at the texture described; extra mixing can add air or develop unwanted gluten.
  2. Then. Fold in flour, salt, and chocolate. Spread in a lined 8-inch pan.Watch for: Cut through the center and sweep up the side while rotating the bowl; stop when the last dry streak disappears so you preserve air and tenderness.
  3. Finish. Bake 22–27 minutes; cool fully before slicing.Watch for: Keep it covered during the rest; move on only when it is evenly cool or firm, including at the center. Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.

The concept

Small ratio changes move a bake along the fudgy-to-cakey spectrum.
