Popover towers

Level 17 of 100Foundation45 min450→350°F / 230→175°CHeat and batter depth

Formula

  • 3 eggs
  • 240 g milk
  • 125 g flour
  • 3 g salt
  • 30 g melted butter

Method

  1. Start. Warm eggs and milk; blend with flour, salt, and butter.Watch for: Use gentle heat and stir often; remove from the heat as soon as the mixture is uniform so residual heat does not take it too far.
  2. Then. Grease and preheat a popover pan; fill cups halfway.Watch for: Let the oven heat for at least 20 minutes and position the rack before the batter or dough is ready. Keep components level and leave edges clean; uneven thickness shows up as uneven setting and slices.
  3. Finish. Bake 20 minutes at 450°F, then 15–20 at 350°F. Keep the door shut.Watch for: Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.

The concept

Starting temperature affects expansion before structure sets.
