Sticky buns
Formula
- 1 cinnamon-roll dough
- 120 g brown sugar
- 85 g butter
- 45 g honey
- 120 g pecans
Method
- Start. Cook brown sugar, butter, and honey just until smooth; spread in pan with pecans.Watch for: Apply a thin, even coat and keep it off cut edges or seams unless the step says otherwise.
- Then. Shape rolls and set them over the cooled topping. Proof until puffy.Watch for: Cover so the surface cannot dry out and judge readiness by volume and feel, not the clock alone; a cool room may need longer. Use only enough flour to prevent sticking and handle evenly so every piece bakes at the same rate.
- Finish. Bake 28–34 minutes; rest exactly 5 minutes, then invert.Watch for: Keep it covered during the rest; move on only when it is evenly cool or firm, including at the center. Begin checking at the early end of the range; use the stated color, movement, or internal-temperature cue rather than time alone.
The concept
Cooling time is part of a recipe, not dead time.
